An ancient variety native to Hérault, the Amellau olive boasts remarkably elegant floral aromas with hints of rose and even lychee. This olive has become rare because its cultivation was abandoned in favor of the iconic Lucques olive.
L'Amellau is also the name of our street in St André, so it was all we needed to add it to our collection of Essentials.
Our advice: as an aperitif on a baguette and in cooking with fish.
